Desert Lantern dishes up trick and treat

It was a case of trick and treat as the spirit of Halloween wafted through Charles Darwin University’s fine dining training restaurant in Alice Springs last week.

Hospitality trainer Nick De Silva said it had become a tradition for students at the Desert Lantern Restaurant to dress up for the final Gueridon dinner night each year.

“There were some spooky sights, but the guests loved it,” Mr De Silva said.

“It’s a bit of fun and adds flavour and atmosphere to the dining experience.

“It’s also how we say farewell to our Certificate III students as they finish their studies.”

Mr De Silva said the Gueridon service featured the spectacular flambé of dishes, prepared in front of guests.

“We had Pernod prawns on the entrée menu and a choice of pepper steak, pan fried barra and roasted pork rack for mains.”

Mr De Silva said more than 100 VET for Secondary School students had undertaken courses in hospitality, cookery, bar and barista this year.

“It’s been another awesome year in the Desert Lantern.”

He said just two weeks remained before the restaurant went into recess for the summer, but by then students would have served more than 3000 meals for the year.
